Vegan mochi waffles – the perfect balance of crisp and chewy. A quick and easy breakfast, snack or dessert.

I recently discovered mochi waffles, and I’m never going back to regular ones. Texturally speaking, these guys are the perfect balance of crisp and chewy. I added chocolate chips to mine, but for a more Asian-inspired flavour, try a combination of matcha and red bean paste.

What Makes These Waffles Mochi-like?

Glutinous rice flour! I tested a combination of glutinous rice flour and other starches, but glutinous rice flour on it’s own worked the best in this case. The batter also isn’t your typical waffle batter, it’s actually more of a sticky elastic dough.

These vegan mochi waffles are also an easy gluten-free alternative, for those who can’t take gluten but still want to enjoy waffles.

Notes

  • The amount of batter depends on your appliance. The chocolate will burn if in contact with the mould, so try to keep it in the center.
  • Cooking time varies based on your waffle maker. The longer you cook the waffles, the crispier they become. I cook mine until I don’t see anymore steam coming out from my waffle maker, about 5-6 minutes (longer than stated in my waffle maker instructions). If you want softer waffles, cook for lesser time.

Vegan Mochi Waffles

Ingredients
  

  • cup glutinous rice flour
  • 1 tsp baking powder
  • ½ tbsp sugar
  • pinch of salt
  • ½ cup plant milk
  • 1 tbsp oil
  • 1 tsp vanilla
  • chocolate chips

Instructions
 

  • Pre-heat your waffle maker.
  • In a small bowl, whisk all the dry ingredients together. Add in the wet ingredients, and fold everything to combine. You'll get a very thick and sticky batter.
  • Grease your waffle maker and add some batter. Sprinkle some chocolate chips, then cover with more batter. Cook the waffles until golden and crispy, around 5 minutes.
  • Enjoy on it's own, or with your favourite toppings.

    you have to try this recipe!! perfectly crispy on the outside and chewy on the inside, absolutely divine :”) i halved the recipe to serve for one and added a little bit more of soy milk because the batter was dry and it worked out perfectly! highly recommend to add some chocolate chips / jam / lotus spread in the middle of the batter🤩 kristin really be serving up amazing recipes again💛
