Your favourite snickers bar made vegan with wholesome ingredients like dates, peanut butter and oat flour. These bars are just as indulgent.
These bars are sO GOOD guys, like I’m not even kidding. I’ve thoroughly enjoyed the process of testing this recipe because that means I have a copious supply of ’em in my freezer. Well, it’s diminishing pretty quickly because my dad loves them too (he’s a sweet tooth).
In all my dessert recipes, I try to reduce the sugar/sweetness because I often find them too sweet. These bars, however, are definitely on the sweeter side so I highly recommend using good quality dark chocolate instead of chocolate chips.
There are three layers to this vegan snickers bar:
An oat flour base made with peanut butter and some dates for sweetness
Sweet and sticky caramel; My date caramel works perfectly here
Roasted peanuts for crunch
And finally, the generous coating of dark chocolate which holds everything together.

Vegan Snickers Bar
Ingredients
Base
- 60 g smooth natural peanut butter
- 2 dates
- 3 tbsp oat flour
- salt
Caramel layer
- 60 g date caramel (I used my own recipe)
- 2 tbsp roasted peanuts halved
Chocolate coating
- ½ cup dark chocolate chopped
- 1 tbsp coconut oil
Instructions
- Soak dates in hot water for 10 minutes, then drain and remove the pits. Line a 6×3" loaf tin with parchment paper.
- In a food processor/blender, combine peanut butter, dates, oat flour and a pinch of salt. Blend together until a smooth dough forms. When you press it with your fingers, it should hold together
- Transfer to the loaf tin and press in with your fingers to form an even layer.
- Make your date caramel. Spread it out evenly over the first layer. Sprinkle peanuts over the top, pressing it in gently. Freeze for at least 2 hours.
- Over a double boiler or in a microwave, melt the dark chocolate and coconut oil. Let cool slightly.
- Cut the large bar into 6 long strips. Using two forks, gently coat each piece in chocolate and set back on the parchment paper.
- Freeze for another 10 minutes to firm up before serving.
