If there’s one thing I really miss before being vegan, it’s the fried egg that used to come with my nasi lemak or toast. It’s not very easy to replicate, but this vegan version made from tofu (no surprise there, you guys know how much I love tofu) comes very close!

My dad is a huge egg-lover and he actually said that he likes these more than the actual ones?! Sadly I didn’t get that on camera so you’ll just have to take my word for it 🙂

Ingredients
  

  • 200 g soft tofu
  • 3 tbsp rice flour
  • 2 tbsp cornstarch
  • ¼ tsp black salt/kala namak
  • ¼ tsp turmeric powder

Instructions
 

  • Blend all the ingredients together except turmeric powder, until smooth.
  • Scoop out 50g of the mixture, and combine that with turmeric powder to form your egg yolk.
  • Heat a non-stick pan on medium-low and brush with a bit of oil. Create the egg white layer by spreading the white mixture into a round/oval shape. Add the turmeric mixture to create the yolk.
  • Cover with a lid and let steam for 1 minute, so that it is cooked through. Remove the lid and fry for a few more minutes until the bottom is golden brown.
  • Enjoy on toast, fried rice and more.

Notes

Black salt or kala namak gives this vegan egg an eggy flavour. If not available, use regular salt instead.
