Nian gao layered like a sandwich between sweet potato and yam, fried to golden perfection. Crisp on the outside and chewy on the inside.
This is by far thE BEST way to eat nian gao. A thick slice of nian gao is layered in between sweet potato and yam, coated in a rice flour batter, and deep-fried until it’s crispy golden brown.
The result is a crunchy golden exterior, and ooey gooey chewy nian gao in the middle.
What you’ll need to make fried nian gao sweet potato yam sandwich
- nian gao. Learn how to make your own nian gao here.
- orange sweet potatoes. I’ve never tried, but I assume any other type of sweet potato will work as well. The texture of the sweet potato might wary, though.
- yam
- rice flour
- ice-cold water
- baking powder
The mixture of rice flour, ice-cold water and baking powder helps produce a batter that is crisp and light. Read more about why it works here.
Tips to making fried nian gao sandwich
- Cut the nian gao, sweet potato and yam into ¼-inch thick. You can cut them into whatever shape and size, as long as all of them are uniform.
- The rice flour batter should be thick! If it’s too watery, you won’t get a thick and crunchy coating. Without the thick batter, the nian gao might melt out of the sandwich while frying too.
- When dipping in the batter, try not to get any batter in between the layers.
- Fry the sandwiches on medium-low heat for at least 3-4 minutes, then increase the heat and fry until golden brown. This ensures that the yam and sweet potato are cooked through.
Can I just use sweet potato?
Yes, you can just make a fried nian gao sweet potato sandwich if you don’t have yam. The method of preparation is the same, and the end result is equally as delicious! Using yam is just a little more interesting 🙂

Fried Nian Gao Sweet Potato Yam Sandwich | v + gf
Ingredients
- 250 g nian gao
- 150 g sweet potato
- 150 g yam
Batter
- 1 cup rice flour
- 1 tsp baking powder
- 1/2 cup ice cold water
- oil for deep frying
Instructions
- Cut the nian gao, sweet potato and yam into ¼-inch thick. You can cut them into whatever shape and size, as long as all of them are uniform.
- Prepare a large pot/pan with at least 1-inch of cooking oil. Once it is hot, reduce to medium-low.
- In a small bowl, mix the ingredients to form a thick batter.
- Coat each sandwich in the batter, then place straight into the oil. Do not overcrowd the pan.
- Fry for 3-4 minutes so that the yam and sweet potato cook through. Then increase the heat and fry for 1-2 more minutes until golden brown.
- Remove from the oil, and let cool for a few minutes before serving.
