When you’re 5 minutes away from your next Zoom call, easy peanut noodles save the day! Highly customizable, always delicious.

Now, I didn’t ask to be peanut intolerant, ok. I’m not even sure whether I’m allergic, I’m just taking precautions because of my allergies. The good news is that you can use any kind of nut or seed butter in this recipe and it’ll come out delicious.

The recipe itself is super customizable. When I’m in a rush (or even if I’m not lol), I just agak-agak the amount of ingredients for the sauce. And if I’m reALLy pressed for time or just downright lazy, I even skip the garlic and ginger. Moral of the story is: you call the shots. (agak-agak = eyeball)

Easy Peanut Noodles (except it’s sunflower seed because I’m allergic)

Ingredients
  

  • 90 g wheat noodles
  • Japanese cucumber julienne
  • toasted sesame seeds

Sauce

  • 1 garlic clove minced
  • 1 tsp ginger minced
  • 2 tbsp peanut butter*
  • 1 tbsp soy sauce
  • ½ tbsp black vinegar
  • 1 tsp sesame oil
  • ½ tbsp chili oil (I used my chili oil recipe)
  • ½ tsp sugar
  • water to thin

Instructions
 

  • Cook noodles according to the package instructions. Drain the water and quickly rinse the noodles under cold water to prevent it from overcooking.
  • Combine all the ingredients for the sauce and mix well before adding water to thin it out. Add in the noodles and coat everything evenly in the sauce.
  • Serve with cucumber slices, toasted sesame seeds and whatever other toppings you'd like.

Notes

  • You can use any kind of noodle, I used somen here.
  • Running cold water over the noodles prevents it from overcooking, and also makes them more springy.
  • I used sunflower seed butter because I might be allergic to peanuts. You can also use Asian sesame seed paste or tahini. Really, any nut/seed butter works.
  • I often eyeball the amount of ingredients for the sauce. Feel free to adjust the ratios to your liking! When I’m reALLY lazy, I even skip the garlic and ginger.
  • Only mix the noodles and sauce when you’re going to serve, otherwise it’ll get clumpy.
    I used my homemade chili oil in this recipe.

      I can’t wait for the recipe so I’ve tried the peanut noodle this afternoon ! It’s soo delicious I’m not allergic to peanut butter so I added as much as I can to mix w the sauce and noodle !😍
