Chinese Cold Soft Tofu

Chinese cold soft tofu

Chinese cold soft tofu – silky smooth tofu doused in sauce, topped with scallions and fried shallots. One of the best ways to enjoy tofu.

When I think of this dish, my po po comes to mind. My po po used to make this dish very frequently for my mom when she was younger. She would buy fresh tofu from the market and serve it for dinner that same day, otherwise the tofu will turn bad. After becoming vegan, I started using tofu in a lot of different, often extravagant ways. This cold tofu dish might not turn heads at the dinner table, but it’ll wow your tastebuds. Sometimes, simple is best and that’s what my po po did.

Chinese cold soft tofu with scallions and fried shallots

There are no rules when it comes to making this cold tofu dish, probably other than

  1. Do not break the tofu.

You can even steam the tofu first if you want it warm.

My sauce is simple: soy sauce, vegetarian oyster sauce, sesame oil and sugar. You can replace the sesame oil for shallot oil, or add chili oil for some heat. I like to top it with fried shallots for some textural interest.

  • 300 g organic soft/silken tofu

  • ½ tbsp sesame oil
  • ½ tsp sugar
  • scallions to top
  • fried shallots to top

Instructions

  • In a small bowl, combine the sauces and sugar.
