Avocado Tahini Toast + Tofu Scramble is a quick yet satisfying meal for any time of the day! With no preparation required, this dish will come together in no more than 10 minutes.
I only discovered avocado toast after becoming vegan and I understand why people love it so much! Perfectly ripe avocados are super creamy and rich. They’re really satisfying and much healthier than butter spreads (even the vegan ones!).
Avocado Toast + Tahini
There are so many variations to avocado toast that I have yet to explore, but lately I’ve been loving it with a tahini spread. It’s a lot milder than peanut butter, but it still tastes nutty (or seedy in this case) and delicious!
The tofu scramble is soft and delicate, much like regular scrambled eggs. I added in tomatoes but you can sub it with any veggies of your choice.
Seasoning for Tofu Scramble:
- turmeric for a natural yellow tinge
- nutritional yeast for a little vitamin B-12
- black salt for a savoury egg-y taste (which you can substitute for regular salt)
- black pepper to enhance the nutritional benefits of turmeric, and for flavour

Avocado Tahini Toast + Tofu Scramble (Vegan + Oil-Free)
Ingredients
Scrambled Tofu
- 2 blocks (140g) firm tofu broken into pieces
- 1 tomato* cut into thin slices
- ¼ tsp turmeric
- 1 tsp nutritional yeast
- ¾ tsp black salt sub with normal salt
- ¼ tsp black pepper more to taste
Avocado Tahini Toast
- 1 avocado sliced
- 1½ tbsp tahini
- 1 tsp liquid sweetener of choice
- ½ tsp lemon juice sub with vinegar
- ¼ tsp red chili flakes
- ¼ tsp salt more to taste
- ¼ tsp black pepper more to taste
- water to thin
To serve
- 2 slices bread toasted
- scallions
Instructions
- In a pan with a bit of water over medium heat, cook the crumbled tofu with all the seasonings until it turns yellow. Toss in the sliced tomatoes and cook until they soften, adding water if it is too dry.
- Mix together the tahini and seasonings. Thin it out with water to get your desired consistency.
- Spread the tahini on the toast then top with slices of avocado OR place the avocado on the toast first and drizzle tahini over it. Serve with tofu scramble topped with fresh scallions. Enjoy fresh!
I didn’t have many ingredients but I never thought of adding Chili flakes (which I had) to my avocado… it gave my meal a nice kick! Overall, simple and easy to modify~
