Vegan Oatmeal Raisin Chia Cookies

These chewy and crisp vegan oatmeal raisin chia cookies are so easy to make, with 10 ingredients in one bowl. Spare 10 minutes and you’ll have cookies in no time!

When I think of homemade cookies, oatmeal cookies always come to mind because they’re comforting, really forgiving and delicious!

These vegan oatmeal raisin chia cookies have perfectly crispy edges and a chewy interior. They’re not too sweet, and packed with hearty ingredients like rolled oats, chia seeds, coconut oil and more so they’re great for both breakfast and dessert!

What you’ll need to make vegan oatmeal raisin chia cookies

  • coconut oil, melted
  • coconut sugar or regular brown sugar
  • non-dairy milk of your choice (soy milk, pea milk, coconut milk, etc)
  • vanilla for flavour
  • all-purpose flour
  • baking soda
  • salt

  • raisins
  • chia seeds, a great source of plant-based omega-3 fatty acids. Read more about them here.

What oats should I use to make these cookies?

I recommend using rolled oats, because they have a much chewier texture than quick cook or instant oats. Steel cut oats are a lot harder than rolled oats, so they need to be cooked first. For the best results, use rolled oats.

Additional add-ins/flavouring

This is a very basic recipe but feel free to make it your own by switching out some of the add-ins with these delicious ideas:

  • roasted nuts/seeds like walnuts, peanuts or pumpkin seeds
  • chocolate chips
  • dessicated coconut
  • cinnamon powder for a little warmth and spice

Ingredients
  

  • 25 ml coconut oil melted
  • 30 ml non-dairy milk
  • 3 ml vanilla
  • 45 g coconut sugar or regular brown sugar
  • 60 g all-purpose flour
  • 1 g baking soda
  • 1 g salt
  • 60 g rolled oats
  • 30 g raisins
  • 15 g chia seeds

Instructions
 

  • Preheat the oven to 200°C and line a baking sheet with parchment paper.
  • In a small bowl whisk coconut oil, non-dairy milk, vanilla and coconut sugar together. Sift in flour, baking soda, salt and combine with a spatula. Fold in oats, raisins and chia seeds, being careful not to overwork the dough.
  • Let the dough rest in the fridge for 10 minutes OR bake straightaway. Divide into 6 equal pieces (45 g each), roll into balls and arrange on the baking sheet. Press down with your fingers until ¼-inch thick (the cookies won't spread while baking).
  • Bake for 15 minutes or until golden brown. Transfer to a wire rack to cool slightly.
  • Serve warm. Enjoy!

Notes

Store Vegan Oatmeal Raisin Chia Cookies in an air tight container at room temperature for 3 days, or longer in the fridge/freezer. Reheat in the oven at 180°C for 5-7 minutes until warmed through and crispy.
