Nutty and subtly sweet – this Peanut Butter Banana Overnight Oats makes for a quick, yet nutritious and delicious breakfast !
The thought of overnight oats transports me back to my last year of high school. Class started at 9AM and lunch break was at 1PM, so I always ate breakfast as late as possible to avoid getting hungry too early later on 😂. I loved bringing overnight oats in jars to school (or anywhere, really) because it’s nutritious, filling and yummy. It’s also not as bulky as other food containers, and low-key super cute !
I admit, I’m not much of a cinnamon girl so I always lean towards peanut butter or chocolate. The flavour combinations for overnight oats are endless, but peanut butter + banana is definitely one of my favourites.
Ingredients for Peanut Butter Banana Overnight Oats:
- banana: I like using very ripe bananas so I don’t have to add any sweetener.
- peanut butter
- chia seeds help to bind everything together, yielding a thicker oatmeal.
- non-dairy milk: I used unsweetened soy milk.
- rolled oats: Use rolled oats for the best texture !
- liquid sweetener: This is optional, if you like your oats a little sweeter 🙂 .
Method:
Mash half the banana and mix well with all the other ingredients. Let sit in the fridge overnight or 30 minutes, top with remaining banana, more peanut butter and granola before devouring.
Very few of us have the luxury of time to flip pancakes on a weekday, but that doesn’t mean you have to skip your morning meal. Overnight oats are super forgiving and convenient – prep it the night before, grab the jar in the morning and go !

Peanut Butter Banana Overnight Oats
Ingredients
- 1 banana
- 1 tbsp peanut butter more to top
- 1 tbsp chia seeds
- ⅓-½ cup non-dairy milk
- 1 tbsp liquid sweetener optional, for extra sweetness
- ¼ cup rolled oats
- granola to top
Instructions
- In a jar, mash half the banana. Mix in peanut butter, chia seeds, milk and liquid sweetener (if using). Stir in oats last.
- Let sit in fridge overnight, or 30 minutes. Add more milk before eating if it's too thick. Top with remaining banana, more peanut butter and granola.
