Blend all the ingredients together except turmeric powder, until smooth.
Scoop out 50g of the mixture, and combine that with turmeric powder to form your egg yolk.
Heat a non-stick pan on medium-low and brush with a bit of oil. Create the egg white layer by spreading the white mixture into a round/oval shape. Add the turmeric mixture to create the yolk.
Cover with a lid and let steam for 1 minute, so that it is cooked through. Remove the lid and fry for a few more minutes until the bottom is golden brown.
Enjoy on toast, fried rice and more.
Notes
Black salt or kala namak gives this vegan egg an eggy flavour. If not available, use regular salt instead.
