Vegan Hot Chocolate with Aquafaba Whipped Cream

Nothing warms you up like a cup of vegan hot chocolate on a chilly day! This Vegan Hot Chocolate topped with a fluffy aquafaba whipped cream isn't too thick or thin, but perfectly creamy.

Ingredients
  

Hot chocolate

  • 1 cup non-dairy milk*
  • ½ tsp cornstarch
  • 1 tbsp cocoa powder
  • ½ tsp instant coffee powder
  • 3 tbsp chocolate chips
  • pinch of salt

Aquafaba Whipped Cream

  • 1 tbsp aquafaba
  • ½ tbsp sugar
  • dash vanilla

Instructions
 

  • In a small pot over medium-low heat, add the non-dairy milk and sift in cornstarch, cocoa powder and coffee powder. Once it starts to simmer, whisk in chocolate chips until everything is well combined.
  • To make whipped cream, beat the aquafaba with an electrical mixer until soft peaks. Add in sugar, vanilla extract and continue beating until you get stiff peaks.*
  • Serve hot chocolate in a mug with whipped cream and a dusting of cocoa powder.

Notes

*You can also use a whisk, though it will take longer to reach stiff peaks.
