Nothing warms you up like a cup of vegan hot chocolate on a chilly day! This Vegan Hot Chocolate topped with a fluffy aquafaba whipped cream isn't too thick or thin, but perfectly creamy.
In a small pot over medium-low heat, add the non-dairy milk and sift in cornstarch, cocoa powder and coffee powder. Once it starts to simmer, whisk in chocolate chips until everything is well combined.
To make whipped cream, beat the aquafaba with an electrical mixer until soft peaks. Add in sugar, vanilla extract and continue beating until you get stiff peaks.*
Serve hot chocolate in a mug with whipped cream and a dusting of cocoa powder.

*You can also use a whisk, though it will take longer to reach stiff peaks.
