Nothing warms you up like a cup of hot chocolate on a chilly day! This Vegan Hot Chocolate topped with a fluffy aquafaba whipped cream isn’t too thick or thin, but perfectly creamy.
After asking you guys over on Instagram to choose between thick or thin hot chocolate, one of you described the consistency of hot chocolate as “a little more liquid than melted hot chocolate”.
This mug of hot chocolate is definitely creamier than your average chocolate milk, but still really smooth and light. I used chocolate chips for this version because it’s the easiest.
Why aquafaba whipped cream?
Sure, you can drink hot chocolate on it’s own, but to me, vegan hot chocolate isn’t complete without some whipped cream!
I decided to make whipped cream from aquafaba, as it’s a lot lighter than store-bought or coconut whipped cream. Hot chocolate is already a rich drink, so I didn’t really want to top it off with an even richer cream.
The whipped cream consists of only three ingredients: aquafaba, sugar, and a little bit of vanilla extract. It’s really quick and easy. The fastest way to do it is by a hand-mixer, but a good old whisk will get you pretty decent peaks too.
Tips to make a good cup of hot chocolate
- Use a creamy non-dairy milk such as oat or pea milk* for a thicker hot chocolate.
- The touch of instant coffee boosts the chocolate flavour, and adds a slight bitterness to the drink. Very much needed to balance with the sweet chocolate chips!
- Salt is a common ingredient in sweet recipes, and it is very important here. It also gives some balance to this sweet drink, but be careful not to add too much. A little goes a long way.
- Beat the aquafaba until soft peaks before adding in sugar, otherwise the cream won’t whip up properly.
- Lastly, feel free to adjust the ingredients to make this mug your own! We all have different preferences, and hot chocolate is a very easy recipe to tweak.
